Many connecting flights to Montevideo will involve two stops, even if you are departing from London. However, departures from regional airports can prove much harder to find - there are no easy connections via New York, as Montevideo only has direct services to New York, whereas Madrid has painfully few feeder flights from UK regional airports.
One option worth looking at if you aren't in a massive hurry is to find flights to Buenos Aires instead, and then to head towards Montevideo by boat. Buqebus ferries take around 2 1/2 - 3 hours, and operate upto four times each day. Considering how long some of the layovers can be on connecting flights, going this way might not take any more time anyway!
