Do you think Preveza, or perhaps Volos is a good alternative for Athens, as there are so few cheap flights there - and why not see a bit of the Greek coast on the way?

  Absolutely not! There is no alternative airport for Athens that is remotely close, and you will end up paying far more to fly into either of these airports, compared to flying direct to Athens, as easyJet have pricing which is aimed at travellers who want to book single journeys.
